Juan Luis & Romer: two paths, one table.
Behind the kitchen at Anhelo Bistro stand two chefs whose journeys finally meet in San Antonio after years of cooking across the world.
Juan Luis spent years honing his craft between Peru and Ecuador, where he learned to treat seafood with the respect it deserves. He brings to our menu the very essence of ceviche: vibrant tigers' milk, precise cuts, and a freshness only possible when you understand the product from the source.
Romer, with a long career in the kitchens of Spain, brings Anhelo Bistro its international reach: comforting French soups, hand-made Italian pastas, and European classics that sit in perfect harmony with the Latin American soul of the restaurant.
